gastronomy


Our delicious cooking is based on natural and healthy foods.

The basic ingredients used in our gastronomy are the same which characterise the cooking of many Mediterranean countries. The way of preparing and combining those ingredients is the secret to guarantee the peculiar flavour of our traditional dishes.

Our gastronomy offer a great variety of typical foods; acqua sala (prepared with stale bread, water, salt, olive oil, tomato, red onion and oregano); grilled aubergines and peppers, dry tomatoes, zucchine alla poverella (courgettes); bruschette (slices of toasted bread seasoned with tomatoes, salt, olive-oil, oregano and garlic); ckclecchj (prepared with fried pastry and stuffed with mozzarella, tomato, olive-oil and anchovy); grilled mushrooms seasoned with olive-oil.

The list of our delicious dishes is also rich of soups such as the soup prepared with dry broad beans and chicories; u pgnatidd (chick-peas and beans cooked on a slowfire in terracotta pans). The other representative food of our traditional cooking is home-made pasta such as cavatelli al sugo, vermicelli con legumi, stascinati alle cimedi rape, orecchiette al sugo e ricotta dura. Meat constitutes another basic element for varous traditional dishes; brasciulett (slices of horse meat filled with lard, parsley, raisin and rolled up), u ctridd (sheep meat stew seasoned with onion, tomato and white wine), u msciesck (smoked horse meat prepared whith fennel seeds). All our specialities go well with D.O.C. Castel del Monte red and rose' wines.

Bakeries represent another essential aspect of our traditional gastronomy, producing the scaldatidd (taralli prepared with white wine and fennel seeds); u chcl (focaccia made with flour and potatoes and seasoned with tomatoes, olive oil and oregano). Treccia is our typical bread, deriving its name from the particular shape. Another element which cannot be disregarded in our diet is the extravergine olive oil. Thanks to its unique, full-bodied taste, this ingredient, that we love definining Green Gold, characterize most of our traditional dishes, especially peppers, tomatoes, aubergines and courgettes preserved in oil.
